Simple tasty meehoon

It is not how it looks that matters but the taste that draws us to this simple dish.
IF you are one of those who love going to the night markets or buying your breakfast on the way to work, it is for certain that you would choose to have the meehoon goreng over nasi lemak, which is the number one favourite, or roti canai, which comes in a close second.
The humble meehoon goreng is often devoid of more substantial ingredients like meat or prawns. And, perhaps, if vegetables like mustard greens and cabbage are added, it is just for colour. But one can rely on this simple dish being a filling snack or meal.
Meehoon goreng is also a culprit that draws one to the night markets as when the trader starts sautéing his sambal or chilli paste, the aroma wafts for a long distance and people are enticed to walk towards it.

The fare is simple with a little bit of minced garlic and chilli paste and if you are lucky, you will find bits of fish cake if it is not vegetarian.
Meehoon goreng is also popular in a vegetarian diet as it fulfils the demands of vegans with the carbohydrates from the ground rice that is turned into meehoon and the addition of carrots, cabbage and other vegetables to make the meal tastier and more colourful.
There are many types of meehoon goreng and as Malaysians go, the spicier it is, the better.
From experience, I find that a lot of people who like meehoon goreng prefer it dry and always with egg and cut into shorter strands.
Meehoon goreng Chinese style is always done with a good shake of the dark soy sauce bottle and it is given more colour with the egg added at the last minute and scrambled and a good measure of spring onions added for bite.
Meehoon goreng Indian style is like the Mamak mee goreng, coated with lots of chilli and has a little more sauce to provide a certain degree of wetness that a good number of Malaysians swear on.
For the Malay style, it is often done kampung style where shallots and garlic are pounded together with some ikan bilis or dried anchovies and a good measure of chillies and belacan and the colour is always an orangey one, thanks to the sambal concoction.
However it is done, the meehoon goreng is a crowd-puller at any outlet that serves it and is bound to make even those with a lack of appetite to tuck in and appreciate the simple but tasty fare anytime of the day.
For those wanting to make a simple fried meehoon or meehoon goreng at home, just follow your heart. Look for some ingredients in your refrigerator and put them all together, in whatever sequence you wish and voila! your meal is done.
Others who still have two left hands where the kitchen is concerned, can go for the supermarket shelves that carry instant flavourings such as meehoon goreng paste from various brands. Then, all you have to do is to follow the instructions on the back of the packaging for a satisfying meal for one or many.
It is difficult to give recommendations but wherever you like noodles to be prepared, it would be equally good with meehoon goreng as it has a ‘no-fail’ recipe, whether for first-timers or experienced cooks.
