CHRISTMAS waves its magic wand over Parkroyal Penang Resort to create an enchanting setting for festive feasting.

The Batu Feringghi beach resort’s general manager Edward Kollmer said the spreads are available nightly from Dec 15 and will feature classic Yuletide must-haves.

“Our culinary team led by executive chef Aidiyusman Mohamad Yushoff has been working tirelessly to make the feasts memorable for everyone. You’ll taste a little Christmas magic with each bite,” Kollmer added.

Each buffet section has cute names, such as the Santa Loves Carving station, where succulent meats take centre stage.

Nothing evokes the feeling of Christmas more than Overnight Brined and Roasted Whole Stuffed Turkey served with giblet gravy and cranberry sauce. One helping is hardly enough.

The Pot-Roasted Beef Ribs, finished medium-rare and blushy pink, drip with rich savoury juices.

Pimento berries, pearl shallots and Yorkshire Pudding are great accompaniments.

There will also be Smoked Barbecue Beef Brisket and Baked Whole King Salmon Normandy Style, alongside roasted vegetables and selections of sauces.

Aidiyusman said these dishes draw on classic, home-cooked recipes which he picked up from his extensive travels and previous work experiences across Europe, the United States and Asia.

“Christmas is a time of celebration and what better way to warm the heart than with flavours that evoke joy and nostalgia.

“As a family-friendly resort, we aim to set the scene for people to come together and make lasting memories,” the chef said.

Wander around and you will also find Le Petit Tapas offerings like Chicken Liver Pate on Toasted Rye and French Beef Tartare on Rice Crisps.

The Elf’s Garden brims with an array of shoots, sprouts and greens, while the Santa Says Cheese tray offers a half-dozen varieties alongside artisanal breads and crackers.

Seafood lovers will be delighted by the assortment of sashimi – which includes abalone, prawns, king salmon and bluefin tuna.

There is also Gravlax and other smoked varieties alongside cold cuts.

Open Santa’s Crock Pot and you may find Creamy Spiny Lobster Bisque.

At Santarina’s Barbecue Pit there are sausages galore, including lamb merguez (spicy sausage), chicken chorizo, German chicken bratwurst and chicken Andouille.

The Santa Goes Around the World hot dishes change nightly.

Among the festive dishes Aidiyusman and his team have lined up are Smoked Duck Breast with Orange Sauce, Oven-Baked Red Snapper Fillets on Braised Leeks, Hungarian Lamb Goulash, Chicken Adobo, Rendang Daging Minangkabau and deconstructed shepherd’s pie.

A Christmas feast would not be complete without sweet treats, and the Christmas Divine section delivers with Black Forest cake, apple strudel, blueberry shortcake, cranberry fudge pie, summer pudding, mixed fruit cake and manuka honey panna cotta.

Equally irresistible are the Pistachio Nougatine, Christmas Croquembouche and tiramisu orange puffs.

There are also warm Sticky Date Pudding and Eggnog Custard, as well as assorted cookies, cupcakes, mince pies and gingerbread.
