Planning a menu of Szechuan and Cantonese dishes certainly offers diners a distinctive experience.

Hilton Petaling Jaya is ushering in the Year of the Rabbit with its “Spring into Abundance” featuring both cuisines.

At Toh Yuen, its Chinese restaurant chef Kelvin Chow Mun Chee, 55, said yee sang evokes joy as it brings families and friends together to enjoy the colourful dish.

“It is just beautiful to see people in a joyful mood. The yee sang toss signifies prosperity, and the season augurs the perfect time for fresh starts and life-changing decisions,” he said.

“Toh Yuen takes the lead with an ensemble of reunion set menus and premium yee sang selections which are exclusive to this season.Fish Maw, Crabmeat and Dried Scallop Soup.Fish Maw, Crabmeat and Dried Scallop Soup.

“Guests will be treated to traditional favorites that are authentic yet suited to the Malaysian taste,” he said.

He added that the array of yee sang includes versions with fresh fruit, soft-shell crab, salmon skin and Norwegian salmon.

Chow said a large portion of yee sang serves six to eight persons and is priced from RM178 nett.

Among the main dishes are the Fatt Choy Four Combination and Fish Maw, Crabmeat and Dried Scallop Soup.

Seafood main dishes include the Steamed Whole Red Snapper in Superior Soy Sauce.

Chow’s team delivered a fresh take on tiger prawns by serving the crustacean in tangy orange sauce.

Glutinous rice wrapped in a lotus leaf was elevated tastewise with dried mussels, scallops and salted egg in the mix while the Crispy Chicken with Almond and Butter Sauce is notch up from its traditional version.

The tau gan, shiitake mushroom and broccoli with goji berries in scallop sauce made its entrance as the vegetable dish for dinner.

For dessert, Chilled Longan and Lychee with Strawberries or Fried Nian Gao with Sesame Seeds added a nice touch of sweetness to our meal.

“The fish, chicken and seafood are carefully selected to ensure freshness in bringing out the texture and natural sweetness when cooked so they can absorb flavours while sauces are made from scratch,” he said.Hilton Petaling Jaya general manager Craig Bonnor said “It is the perfect time to reunite with your loved ones over our delectable menus,” he said.

“Diners can choose from three premium sets catering for a small gathering and bigger groups too.
