Many are looking forward to savouring festive dishes that will only be around for a limited time for Christmas.

During this season of glad tidings and like many other festivals, food is an important aspect of the merry-making which will take place from Christmas Eve right up until New Year’s Day.

Recognising the importance of family togetherness, Makan Kitchen at Doubletree by Hilton Shah Alam i-City is celebrating the spirit of Christmas with a buffet of hearty traditional favourites.

With the “Hilton Holidays” celebration in mind, the hotel’s executive chef Lee Keen Suaan, 36, said the Makan Kitchen team had put together specials including Six Grand Roasts for Christmas, an Oyster Bar featuring Irish oysters and a Christmas-inspired beverage with a fizz.

The festive buffet has a good range of Malay, Chinese and Indian food to cater to the multiracial customer profile. Among the dishes are rendang, lamb curry and dim sum.

Lee with the help of his team have meticulously crafted an exquisite selection of dishes, not just to tantalise your tastebuds but to create cherished moments with loved ones.

“I believe diners will enjoy the Six Grand Roasts for Christmas – Beef Wellington, Roasted Leg of Lamb with Rosemary and Masala Rub, Baked Salmon with Dill Salt Crust, Chilli and Cajun-roasted Whole Turkey, Honey-glazed Chicken Ham with Caramelised Sarawak Pineapple and Braised Beef Brisket with Hickory,” he said.

Makan Kitchen’s Baked Salmon with Dill Salt Crust is a speciality here and is something to look forward to.

Even though the fish is oven-baked, it is moist due to the salt layer which helps insulate the fish and cook it evenly.

Stuffed in its belly are a variety of vegetables which add layers of flavour to the meat.

The fish is best relished with white sauce while the roast lamb is to be enjoyed with mint sauce.

Christmas is not complete without turkey and at Makan Kitchen, Lee marinates the bird with apple juice, salt, sugar and aromatic warm spices such as cinnamon stick and star anise.

The tender and juicy meat is to be savoured with sweet cranberry sauce and its trimmings.

Hot-from-the-grill favourites are not to be missed as a barbecue station serving chicken wings, seafood and sausages has been set up at Makan Kitchen’s balcony area.

At Christmas time, desserts are also must-haves, so the chefs here invested a lot of effort to create decadent sweet treats to impress tastebuds.

Among the delightful creations are Christmas pudding with vanilla sauce, stollen, mini fruitcakes with edible snowmen, panetonne, mousse and cupcakes.
