In her sun-dappled kitchen, the sprightly, elegant 76-year-old Judy Wong-Theseira is gently encouraging Man Lam Cing, 27, better known as Benna, to stir the contents of a pot slowly.

“It needs to be done carefully,” she says, and Benna nods in agreement.
