Kelantan delicacy the star dish at live action stations

A NEW hotel is offering a stunning display of appetising options for its first Ramadan buffet.

Fairway Coffee House – the all-day dining restaurant at M Resort & Hotel – is promoting local delicacies and its Citarasa Warisan Malaysia buffet dinner is available until April 21.

Live action stalls are usually the main attraction at Ramadan buffets but this restaurant has something extra special to mark its debut – lemak bakar.

It looks like a thicker version of satay, but it’s literally beef fat that has been infused with a special marinade and grilled on high flame, best eaten on its own or with air assam.

Lemak bakar is a popular delicacy from Kelantan and a favourite for the breaking of fast.

“I read a few online reviews about this dish, which is sought after by the Malay community.

“Our specialised Malay cuisine chefs managed to cook lemak bakar and we found it good,” said hotel executive chef Irwin Chan.

“Lemak bakar can be found in Kelantan once a year, and the marinade is similar to the one used to make satay,” he added.

Other than lemak bakar, a must-try is the grilled seafood at the live action stall, and our favourite – the lemang and the pulut hitam lemang – with a few types of serunding.

“We wanted to offer something different, so we set up as many live action stalls as possible to make the buffet livelier,” he said.

It is indeed an extensive line-up of food, comprising traditional favourites like the Ayam Percik Madu Tiga, Daging Masak Lemak, Beef Kerutub, Lamb Masak Hitam, Ikan Berlado Minang, Sambal Udang Petai and Pisang Muda Masak Lemak Udang.

The kambing golek and ayam golek stood out for us and we particularly liked the unusual Ikan Bilis Sambal pizza, which tantalised us with its vibrant colours.

Of course, the prawns, mussels and crabs on ice was the highlight of the evening.

We were very impressed by the dessert display that enchanted diners with its Biscoff Swiss Roll, Classic Caramelised Pineapple, Chocolate Caramelia Choux, Passion Fruit Kaffir Lime Tart, Jackfruit Financier, Berry Panna Cotta, Vanilla Creamy Custard and the Date Bread Pudding with Crème Anglaise.

Assorted Malay kuih, dodol, refreshing jelly and selections of fresh sliced fruits were also available.

The Citarasa Warisan Malaysia promotion is available from 6.30pm to 10.30pm.

It is priced at RM125 nett per adult and RM63 nett per child aged five to 11 years.

Advance reservations are highly recommended.
