With a focus on fresh seafood, award-winning restaurant has adapted its recipes to suit the Malaysian palate

AN AWARD-WINNING Chinese restaurant has launched its first pork-free outlet in Kuala Lumpur.

Putien is well-known for delivering a culinary journey inspired by the dishes of the Chinese province of Fujian.

Tien by Putien at Suria KLCC serves these dishes without pork, lard and alcohol.

Fujian cuisine focuses on simple, modest cooking methods to bring out natural flavours in each dish.

One of the restaurant’s standout dishes is the Fresh Eel Cooked in Spring Water.

To ensure the eels are fresh and succulent, Tien by Putien’s eels are air-flown from eel farms in Ningde, Guangdong, China.

These eels are sourced from “the hometown of eels” and meet Japan’s export-grade standards.

Raised in clean, open-air ponds, the eels are fed codfish powder, ensuring exceptional flavour and quality.

Cooked live, these eels develop a delightful chewy texture.

To ensure a perfect meat-to-oil balance, only eels weighing between 600g and 800g and measuring around 70cm in length are selected.

Fresh live eels are seasonal and the best time to harvest them is from August to November.

Tien by Putien offers this seasonal dish priced at RM138.

Live eels are brought to the customers’ tableside and cooked for approximately 10 minutes.

Also imported from China is the red mushroom for the Red Mushroom Lor Mee.

The dish, priced at RM26, was my favourite as the delectable noodles had a velvety broth.

It traditionally features thick, flat yellow noodles, boiled to achieve a tender yet resilient texture.

Bathed in the sumptuous, red-hued gravy, the noodles take on a luxurious, silky smoothness after soaking up the flavours of the broth.

The red hue comes from the use of red fermented tofu, which adds a touch of sweetness and a complex umami flavour.

Wide windows at Tien by Putien provide a captivating view of Kuala Lumpur while its interior has soft colours, such as warm wood tones and light blues to create a pleasant dining ambience.
