Putrajaya hotel serves reimagined delights, Christmas favourites
THE pastry chef of a hotel in Putrajaya is taking a contemporary approach to some of its desserts this year, making a reimagined version to tempt diners with new treats.
“While Christmas is about honouring tradition and sticking to tried-and-true recipes, we are adding a modern twist to some of the dishes to give them a fresh and exciting appeal,” said pastry chef Suhairizam Yahya from Putrajaya Marriott Hotel.
For example, instead of a large serving of apple pie with shortcrust pastry, his version is a bite-sized treat resembling a small sandwich, offering a lighter feel with every bite.
“This dessert has all the elements of a classic apple pie – caramelised apples, walnuts and almonds, but in a smaller size,” he said.
“The chocolate tart is reimagined in a style similar to a pineapple tart – with a rich chocolate filling and velvety chocolate mousse.”
Suhairizam highlighted that one of the desserts – the Petit Antoine – won an award at the iChef Malaysia Festival in 2017.
The Petit Antoine features crunchy hazelnuts with rich chocolate, creating a perfect pairing of flavours and textures.
These temptations are part of the lavish Christmas feast served at Zest Lifestyle Restaurant, Putrajaya Marriott Hotel.
Other standouts from the dessert section include White Chocolate Strawberry Mousse, Blueberry Cheese Tart, Raspberry Cake, tiramisu, sachertorte crowned with macarons, Apple Cranberry Crumble as well as quintessential Christmas treats Yule log and stollen.
The main Christmas spread is equally impressive, with New Zealand Prime Ribs, Beef Wellington and Salmon Wellington as the highlights.
The Salmon Wellington is best enjoyed when paired with a rich cream sauce while the Beef Wellington is perfect as is.
They are served with accompaniments such as braised Brussel sprouts with turkey ham, maple glazed baby carrot with almond and roasted pumpkins.
Seafood fans can look out for dishes such as Scallops with Thai Mayo Sauce, Oysters with Bechamel Sauce and Mussels with Breadcrumbs.
These are served alongside a selection of Asian dishes, including Chicken Tandoori, Sotong Masak Ros, Lamb Rogan Josh, Ikan Masin Masak Lemak Nenas, Kepah Berlada, Pajeri Terung, Fermented Soybean with Pineapple Kebab, Prawn with Butter Cream and Oats, Fish with Ginger and Spring Onion and Pad Woon Sen (Thai Stir-fried Glass Noodle).
There is also a dedicated station where pastas are cooked to order.
