Every year children write to Santa about what they want for Christmas.
Building on this, St Regis Kuala Lumpur has crafted a Christmas afternoon tea set.
Themed “Letters to Santa”, it offers various sweet and savoury treats.
The menu’s first course was the Salmon Mille-Feuille which wraps salmon mousse, coriander and Granny Smith apple inside a thin crispy skin.
Next up, diners were served a range of delicate snacks including the Foie Gras Terrine, Mushroom Croquette, Truffle Egg Mayo Sandwich and Duck Rillettes Tartlet.
The Foie Gras Terrine coats the herbaceous and soft foie gras inside a layer of cream paired with mildly bitter valrhona chocolate, and slightly sweet cranberry chutney.
These were set upon on a lightly crumbed biscuit base.
The scent of the Mushroom Croquette with truffle aioli stimulated diners’ senses.
Its crispy skin held together the mushy and savoury fillings that enriched the palate.
With a similar aroma, the delicate Truffle Egg Mayo Sandwich was presented with well-balanced textures of fluffy and peppery egg mayo, and bread.
On the other hand, the Duck Rillettes Tartlet was a beautiful combination of sweetness and savouriness.
The sweet-and-sour fig marmalade and fragrant pickled onions on top paired well with the savoury and tender duck rillettes.
Diners were served a range of desserts that included macarons, tarts and choux.
The crispy macarons are layered with milky white chocolate ganache and fruity blackberry gel.
The tarts’ taste was dominated by the bittersweet chocolate cake enhanced by crunchy hazelnuts.
It was also topped with a slightly sour raspberry mousse dome that enriched the dessert’s overall flavour.
The choux was characterised by its matcha cream topping balanced out by a sweet red bean filling that had a sandy texture.
Other components of the course were the Milk Chocolate Mousse with Banana Passion Jelly that was set on the Chocolate Sleigh as well as the Bon Bon with Caramel Milk Chocolate and Chocolate Sable.
The former was shaped as a gift box on a sleigh while the latter resembled a mail box.
The afternoon tea ended with crispy and mildly sweet scones that were served on their own or with cranberries.
Both variations had a strong buttery aroma and were presented with clotted cream as well as strawberry and lemon jam.
A wide range of teas including St Regis Kuala Lumpur’s Exclusive House Blend, French Superblue Lavender, English Breakfast, Organic Earl Grey, Chamomile Herbal and Japanese Sencha were also available.
The exclusive house blend featured hibiscus green tea.
Guests can also engage in an interactive activity by writing with edible ink on an edible letter that came together with a chocolate frame and a sable.
Executive chef Nur Azizi Taslim said all the courses contained elements reminiscent of postal services.
“For example, the Salmon Mille-Feuille is shaped as a letter and served inside a mail box, in line with the theme ‘Letters to Santa’,” he said.
Meanwhile, executive pastry chef Graff Kwok described the courses as “pieces of fine art”.
“Besides suiting the theme, their shapes are also an out-of-the-box presentation,” she said.
