THE main seasoning in lobak is Chinese five-spice powder, which consists of a mixture of star anise, cloves, cinnamon, Sichuan peppercorn and fennel seeds.

That is why it is known as ngo hiang in Indonesia and Singapore, and quekiam in the Philippines, both of which translate to mean “five spice”.
