ONE of the best things to enjoy during the Raya celebration are the jars of colourful and scrumptious kuih raya that one can munch on. Here are five unusual and delicious kuih raya that are easy to make.

1. Florentine Biscuits

Also known as Crunchy Caramel Almond Biscuits, this kuih raya is one of the newest sweets.

It is crispy and slightly chewy with a buttery-caramel flavour. It can be made using simple ingredients like almonds, hazelnuts, seeds, florentine flour, fruits and chocolate to enhance the flavour.

The kuih is sugar-free and can be enjoyed by people of all ages.

The price on the market ranges from RM10 to RM15, depending on weight or the number of pieces in one container.

2. Laksa Biscuits

If you are a fan of laksa, this savoury biscuit is perfect to enjoy in the evening. It is a basic butter biscuit recipe that tones down the butter and infuses curry laksa paste mixed with curry leaves.

The spicy and salty-sweet combination results in the delightful laksa flavour that is loved by many.

Even though it is rare to find in the market, the biscuit is easy to make with simple everyday ingredients like curry laksa paste, curry leaves, butter, baking powder, baking soda and icing sugar.

4. Pandan Diamant Biscuits

With a flavour that is beloved by many Malaysians, the Pandan Diamant kuih raya is crumbly in texture and has a floral aroma.

With only six ingredients, this kuih raya is simple to make and is flavourful.

You can increase its rich taste by using high-quality butter, which will make the biscuit thick and creamy.

5. Harumanis Tart

The name of this tart is due to its appearance, which is the shape of a harumanis mango with a green leaf pastry decoration on top.

This kuih raya is hard to find and many are not aware of its existence.

Most people often buy and serve the more common pineapple tarts instead.

Even though it is tedious to make, a successful attempt at the jam and the pastry will get you a really delightful sweet for Raya mornings.
