French pastry chef unveils new creations at cake shop


Vanilla Strawberry St Honoré cake is available at Mandarin Cake Shop.

A RANGE of new creations is now available at the Mandarin Cake Shop that is led by executive pastry chef Kevin Pannier at Mandarin Oriental, Kuala Lumpur.

A classically trained pastry chef with over 18 years’ experience, Frenchman Pannier excels in showcasing a balance of flavours using a variety of ingredients.

He has curated an enticing menu that showcases his passion for blending flavours and textures. Among the highlights are:

• Vanilla Strawberry St Honoré: This typically French cake features a flaky, caramelised puff pastry crust, choux pastry studded with crumble and Tahitian vanilla cream topped with home-grown Cameron Highland Chitose strawberries. The St Honoré cake is also one of the most popular desserts in France.

• Paris Nice: An alliance between chocolate and milk, this dessert is made with a dacquoise biscuit with crunchy hazelnuts, crisp hazelnuts, thin wafers of milk chocolate, dark chocolate cream and milk chocolate Chantilly.

• Kalamansi Pie: True to the flavours of Malaysia, the Kalamansi Pie has a sweet, thin crust, dacquoise biscuit with crunchy hazelnuts, kalamansi cream and citrus gel.

• Chocolate Heritage: A layer of chocolate cake made with Malaysian homemade chocolate cremeux, cocoa nibs crisp and 70% dark chocolate bavaroise. The cocoa used is sustainably sourced from Pahang.

“My approach to cakes always begins with a combination of flavours,” said Pannier.

“Delicious cakes always tend to leave a lasting impression.

“These cakes are just the first of many creations that will be featured at the Mandarin Cake Shop.

“I hope to continue to innovate with the team and produce many wonderful delights for our guests and customers,” he said.

The Mandarin Cake Shop also features a selection of gluten-free and vegan options.
