GRAZE, relaunched as an authentic Italian restaurant at Hilton Kuala Lumpur, is now helmed by chef Nicola Affatati.
Inspired by the rich and diverse tapestry of Italian cuisine, Affatati brings a wealth of experience.
Hailing from Puglia in southern Italy, Affatati relishes his childhood memories of cooking alongside his great- grandmother.
Puglia is known for its whitewashed hill towns, centuries- old farmland and charming Mediterranean coastline.
Affatati loves creating handmade pasta including regional varieties such as cavatelli and orecchiette.

Guests at the recent relaunch event were treated to creamy Burrata Cheese served with Beef Bresaola and Mesclun Salad, and Beef-Lamb Meatballs accompanied by a rich tomato-basil sauce.
Taking centre stage were Handmade Cavatelli Pasta served with Prawn Bisque and Shellfish, and also Atlantic Cod with Potato Cream, Bell Pepper, Oregano, and Caper Oil.
House-made cannoli filled with delectable crema pasticcera was served as the dessert.
At Graze, the culinary journey goes beyond the plate. Guests can complement their Italian dining experience with an array of delightful beverage choices.
