After a day of fasting, a spread comprising over 100 dishes and 18 live-action stalls may leave one spoilt for choice.

A wide range of dishes has been reintroduced – with a twist – at Swez Brasserie at Eastin Hotel in Petaling Jaya, Selangor.

Choices here include Traditional Roasted Lamb Stuffed with Briyani Rice, Gear Box Soup, Siakap Stim Masak Nyonya and Ayam Penyet Cabai Hijau.

For fans of spicy dishes, this buffet named “Icip Icip Kampungku” will not disappoint with its flavourful selection.

“The sous vide technique of vacuum-sealing food in a bag and then placing it in a water bath to cook at a precise temperature for an extended period is used to make Ayam Penyet Cabai Hijau,” said Eastin Hotel executive sous chef Dennie Yudie Darmawan.

“The chicken is then deep-fried, pounded for a softer texture, and topped with spicy cabai hijau (green birdseye chilli).”

Accompanying this main is Iga Penyet, which is fried beef spare ribs, along with the freshly made and fiery Sambal Terasi.

According to the chef, Iga Penyet is a popular dish from East Java, Indonesia.

Junior sous chef Muhammad Yusri Kamaruddin said that a favourite among guests was Gear Box Soup, a hearty beef bone marrow broth boiled with onions and numerous fragrant spices.

He also highlighted the Rendang Tulang Rusuk.

“Apart from the signature dishes, our buffet spread showcases local favourites such as Rendang Ayam Kampung, Kambing Masak Hitam, Ikan Bakar Stuffed Cencaru Fish with Chilli Paste, Bakso Balungan, Ketam Masak Tiga Rasa and Burung Puyuh Berempah,” said Muhammad Yusri.

For those with a sweet tooth, the buffet features an array of desserts too. There are assorted traditional kuih, onde-onde, Jackfruit Mango Sago, Ginger Creme Brulee, Durian Apam Balik, Dodol, dates and a chocolate fountain in which you can dip marshmallow or fruit.

The dining experience is enhanced by soothing modern instrumental music performed by a two-member band.

“Icip Icip Kampungku” Ramadan buffet dinner is available from 6.30pm to 10.30pm until April 8.
