Spanish twist to tasting menu awakens taste buds at KL eatery


The 10-course Tapas Temptation features dishes created in homage to Spanish coastal cuisine.

TRACE Restaurant and Bar at Element Kuala Lumpur has reintroduced its crowd-pleasing Chef’s Tasting Menu with a new Spanish tapas-inspired makeover.

The 10-course tasting menu has won the hearts of many customers since it was first served in Jan 2024.

Its second edition named “Tapas Temptation” will tempt diners with an exotic twist.

“Traditional Spanish food evolves while embracing culinary innovations,” said senior sous chef Hasrul Hawari who created the new menu.

“Spain’s best chefs have earned recognition for their creativity and modern versions of heritage dishes.

“This convergence is crucial and attractive to new generations of chefs, and food enthusiasts alike,” said Hasrul who has 15 years of culinary experience.

Drawing inspiration from Spain’s coastal areas, the menu unfolds with the Jar Salad and Caprese Skewer, inviting diners to mix their very own salad.

They are then presented with a sampling of a reimagined classic Caprese salad skewed with Bocconcini and cherry tomatoes.

A corn-crusted Roasted Chicken Roll is served next, paired with Romesco sauce and topped with a cured egg yolk for that umami taste.

Made with fresh sushi-grade diced tuna, pickled kyuri and honey mustard mayo, the Tuna Tartare is light and delightful.

Hasrul created the Seafood Tomato Saffron Broth in homage to Spain’s coasts.

In this two-parter, shrimp, clam, squid and fish fillet are presented in a soup plate before waiters pour on broth.

A Cherry Trio Palate Cleanser is then served to help reset the taste buds.

The experience continues with Scallop Pasta on Shell served in small yet bold-flavoured bites to enable diners to savour the balance of seared scallop and creamy spaghetti.

In his Quail Paella, Hasrul spotlights the meat in his adventurous take on the Spanish classic.

He then serves two more courses of tapas, namely the Spanish Meatball and House-Smoked Duck Breast.

The 10th and final course is Choc Lemon Mousse with white chocolate, lemon, pistachio and mixed berries.

The Tapas Temptation: 10-Course Chef’s Tasting Menu is available from 12.30pm to 3pm on Saturdays, Sundays and public holidays.

It is priced at RM238nett for two persons.

An advance reservation of at least one day is required.

Trace, which is located on the hotel’s 40th floor, offers an airy space, laid-back ambiance plus scenic views of Kuala Lumpur’s skyline.
