Gelato is essentially ice cream made in a traditional Italian style and it is significantly lower in fat and air content than regular ice cream.
“Ordinary ice cream, which is cream-based, has a fat content of about 24% whereas gelato, which is milk-based, has a fat content of about 6% to 8%,” said Gino Soldan, the “Master Gelatiere” at Morelli’s Gelato.
